Huitlacoche for tacos or quesadillas

Description

Corn smut (Ustilago maydis) is a pathogenic plant fungus that causes smut disease on maize and teosinte (Euchlena mexicana). The fungus forms galls on all above-ground parts of corn species, and is known in Mexico as huitlacoche; it is eaten, usually as a filling, in quesadillas and other tortilla-based foods, and soups.

This is a basic but delicious recipe

Ingredients

2 c
Huitlacoche (chopped)
1⁄2 c
Red onion (diced)
1 1⁄2 clv
Garlic (finely diced)
1  
Tomato (chopped)
1 T
Olive Oil (Extra virgin)

Instructions

Heat the olive oil in a pan, fry the onion, then the garlic. Add the tomato and lastly add the huitlacoche until it softens. Add salt to taste.

Serve over hot corn tortillas and green sauce on the side.
